Make your own pleasantly mild Camaldoli sourdough. Sourdough is one of the easiest of the ferments, and can be used for more than just bread. Camaldoli is ideal for pizza dough and Italian-style breads. Reusable - by reserving a bit from each batch, you can continue to make Camaldoli sourdough indefinitely.
